Product Introduction
Forged carbon steel knives are knives made by repeatedly hammering, folding, shaping, and heat treating (such as quenching and tempering) high carbon steel at high temperatures through a forging process.
Product Features
High Carbon Content
Forged carbon steel knives use high carbon steel with a carbon content of 0.8% to 1.0%. Compared with low carbon or stainless steel materials, they have a higher Rockwell hardness, generally reaching HRC58 or above, which means that the blade can remain sharp after long-term use and is not easily worn.
High Toughness
Each carbon steel knife undergoes multiple high-temperature forging and repeated hammering to form a dense and uniform metal crystal structure, effectively eliminating the internal stress of the material and improving toughness and impact resistance. Under the same impact force, the probability of fracture of a hand-forged carbon steel knife is 35% lower than that of a machine-pressed knife.
Small Blade Angle
Forged carbon steel knives use multiple manual grinding processes to keep the blade angle between 13° and 15°, which is much lower than the 20° to 25° angle of ordinary mass-produced knives. The smaller blade angle means the blade is thinner and sharper, which can easily cut hard ingredients without chipping, reducing cutting resistance by more than 30%.
